# FOOD ONTOLOGY — prefer / avoid / substitute

Living list. v1 is a seed, not a database. Later the resolver uses this plus Open Food Facts plus a Nordic table (Livsmedelsverket / DTU) plus USDA.

## Prefer (modern, obtainable)

| Ancestral idea | Buy / cook today |
|---|---|
| Ruminant, game | Beef, lamb, goat; venison if the freezer has it; supermarket steak if that is what exists |
| Whole animal | Liver, heart, oxtail, bones for broth; if liver is a wall, pâté or a little mixed into mince |
| Fat as energy | Butter, cream, tallow, lard, egg yolks |
| Trusted dairy | Known farm; raw only if legal + marked trusted; else whole farm milk, skyr, kefir, aged cheese |
| Cold-water fish | Herring, mackerel, sardines, salmon |
| Plants that grow here | Cabbage, kale, swede/rutabaga, beet, carrot, onion, leek, apple, berries |
| Ferment | Sauerkraut, pickles, kefir, yogurt from good milk |
| Fire cooking | Cast-iron pan, oven, leftover stew in portions |

## Avoid / flag

| Thing | Why Iðunn flags it |
|---|---|
| Seed oils | Industrial fat; not food Iðunn cooks with |
| Fast food / unknown fryer | Source and fat are a black box |
| Ultra-processed packaged | Chemistry set for an ingredients list |
| Fluoride in food/drink | Not a food; see PHILOSOPHY |
| “Heart-healthy” margarine | Seed-oil product in a health costume |
| Calorie-only shakes | Not a plate |

## Cooking fat cheat sheet

**Use:** butter, ghee, tallow, lard, duck fat, olive (for cold or gentle).
**Do not recommend:** canola, sunflower, soy, corn, grapeseed, margarine, “vegetable oil.”

If a photo looks like canteen fries: say so, suggest the next meal from inventory or a pan recipe, and leave the choice with the user.

## Aliases (later)

Users teach the system (“Oma’s stew” → ingredients). Store as long text. Do not over-normalize in v1.
